Baking with Less Sugar - Recipes for Desserts Using Natural Sweeteners and Little-to-No White Sugar

We don’t need to eat as much sugar as we do. Many crave less-sweet treats, or to taste the deep flavors of fruit, nuts, and spices. These really shine through when baking with less sugar. Some need to lower sugar intake for health benefits, and others are baking for their children, who should be discouraged from worshipping sugar. For all of us who love to bake and sweeten our days with special treats, here’s Baking with Less Sugar.

Beloved author Joanne Chang, renowned for her beautiful pastries and desserts at Flour Bakery + Cafés in the Boston area, and creator of amazing baking recipes in Flour and Flour, Too, has reformulated Flour favorites and developed new recipes to present more than 60 recipes with much less or zero refined white sugar. Instead, you’ll find the famous Flour banana bread made with only six tablespoons of refined sugar, gooey Honey Cashew Morning Buns, Keith’s Super-Snappy Gingersnaps that derive some of their spicy snap from the bite of molasses, and a gorgeous carrot layer cake sweetened with apple juice. An entire chapter is devoted to the unadulterated pleasure of chocolate, most intense when not tempered by the addition of sugar. Cookies, muffins, doughnuts, cupcakes, creamy desserts such as crème caramel and ice cream—all of your favorite sweets are here, and all made by Baking with Less Sugar.

Joanne Chang is the co-owner and pastry chef at Flour Bakery + Café, with locations in Boston and Cambridge, Massachusetts, and co-owner of Myers + Chang.
